Expected Outcomes

A mission of the Department of Animal Science, Food and Nutrition in the College of Agricultural Sciences is to prepare individuals to provide nutrition services through agencies whose mandate is the organization and delivery of health services to people living in the community. Education for dietetic practitioners is a major responsibility of the Department. Although minimum competencies necessary for practice may be obtained through several methods, the Department is dedicated to providing:

  • graduate credit and completion of the Master of Science Degree in Food and Nutrition with a specialization in community nutrition,

  • knowledge and supervised practice experiences to meet the Standards of Education of CADE (Commission on Accreditation for Dietetics Education) of The American Dietetic Association,

  • a route for students to become eligible to take the Commission on Dietetic Registration's registration examination for Dietitians, and

  • supervised experiences that prepare students to practice as competent, entry-level dietitians in community health care settings.
SIU's Dietetic Internship students complete both core and community emphasis competencies as outlined in the Standards of Education. Additional assignments in course work provide experiences in health promotion and disease prevention that augment practice in primary and ambulatory health care.
